2 Tbsp. butter
1 cup sugar (divided)
1/2 cvup flour
1 tsp. baking powder
1/8 tsp. salt
1/2 tsp. cinnamon
1/2 tsp.nutmeg
juice of small lemon
1/2 cup boiling water
1/3 cup milk
1/2 tsp. vanilla
2-15 oz. cans sliced peaches, drained
Heat oven to 350 degrees. Cream butter, sugar. In another bowl sift flour, salt, baking powder. Add butter mixture along with milk and vanilla. Looks like cake batter.
Pour batter into greased 9x9 pan. Drain peaches. Place fruit on top of batter. Sprinkle cinnamon and nutmeg over fruit. Sprinkle remaining sugar on top of fruit and spices. dd lemon juice to boiling water and pour over fruit. Bake 40 minutes or appears golden brown.
